Ready to try CAULIFLOWER toast/buns/pizza crust/crackers/EVERYTHING?! This is a really good gluten-free, low-cal "base" option. I have tried several different recipes for a cauliflower "base" and I finally found the perfect one that's super easy and can be used to make all sorts of things. Here it is:
2 cups of Cauliflower Rice
Salt and Pepper - to taste
Pour all ingredients into a bowl
On a medium-sized pan, heat olive oil over medium-high heat
Put a few spoonfuls of the cauliflower mixture onto the pan and shape into toast (depending on what you want to make... If you are making crackers, shape into smaller circles. If you are making buns, shape into larger circles... etc.)
Cook for about 5 minutes on each side, until both sides are golden-brown
I've been making my cauliflower toast in a few different ways.
1. It can be used as "buns" for your veggie burger (instead of a lettuce-wrap, photo below)
2. You can top it with avocado, lemon, and pepper and have a gluten-free avocado "toast"
3. You can shape them into small cracker-sized bites and top it with hummus or tuna (pictured below)
4. Top it with a spoonful of pizza sauce, light mozzarella cheese, and your favorite veggie pizza toppings for mini personal-pizzas! (I like chopped cherry tomatoes, jalapeños, basil, and italian seasoning)
