I had so many great reviews about the Chia Pudding parfait in my book, so I thought I’d change it up a little and do a STRAWBERRY Chia Pudding. This recipe is just as easy as the plain chia pudding recipe and it’s incredibly good. I eat this for breakfast OR dessert!
MAKES ABOUT 4 SERVINGS… Leave the rest in your fridge for the week!
2 cups of Unsweetened Almond Milk
6 ounces of Fresh OR Frozen Strawberries – cut the tops off (about 12-15 strawberries)
½ cup of Chia Seeds
1 teaspoon Vanilla Extract
(OPTIONAL) Tablespoon of Raw Manuka Honey to taste – I like Wedderspoon’s brand, here it is
1. Place almond milk and strawberries in a blender and blend until smooth
2. Pour into a bowl and stir in chia seeds, honey (optional), and vanilla extract
3. Cover bowl with plastic and refrigerate until set, about 2-4 hours
4. If it is not thick enough, like yogurt, add more chia seeds and let it sit longer
