Tuna Stuffed Pepper

Ingredients:

One bell pepper

One can of tuna in water

1/2 avocado

1/4 onion - chopped

Dollop of dijon mustard

Salt & Pepper - to taste

Directions:

1. Drain tuna

2. Cut the top off of the bell pepper and remove seeds

3. Mash tuna, avocado, onion, mustard, salt & pepper in a bowl

4. Spoon mixture into hollowed out pepper
